Nice and plain (ie no mushrooms, peppers etc) for me apart from a sprinkling of Henderson’s Yorkshire Relish or Brown Sauce on the side. Normally save some to make a sarnie

3 eggs, 3 small chillies finely chopped.

Spoon of melted butter into the mix, butter bubbling in the pan. As an edge starts to form, pull into middle of pan, continue until just firm. Turn heat off and fold over the omelette.

Microwave some spinach to have on the side.

Omelegg in Amsterdam is alright but never worth the queue to get in.

Can probably make better at home yourself

IMO the pan makes all the difference

Very nice. My ideal would be what you described but with a bot of sliced ham. Decent ham though, none of that wafer thin malarkey.

Best with some finely diced Cypriot pastourma sausage (or Chorizo if you can't find) or smoked salmon flakes.

I find onions a big too heavy for morning omelette so use chives...preferably fresh ones.
